Fairmont Hotels New Year’s Eve Menus
ARC Restaurant

ARC Restaurant will offer two feature New Year’s Eve dining menus. Guests can choose between a three-course First Seating, or six-course Second Seating New Year’s Eve dining reservation, and toast to a bright year ahead. Featuring live music, the early seating will begin from 5:30pm to 8:00pm with the main event seating starting from 8:00pm until late.
Prepare to enter the new year fulfilled as ARC’s famous bottomless brunch takes on a festive new year’s twist. Chef Adam Middleton will be serving an array of festive favourites to accompany ARC’s well-known brunch classics. Available January 1, from 10:30am – 2:30pm. Brunch reservations are required.
Botanist Restaurant and The Lobby Lounge

Ring in the New Year with Botanist‘s special “We’ll Take It From Here” tasting menu. Executive Chef Hector Laguna has a culinary feast that will send 2023 away in style, while Executive Pastry Chef Kate Siegel will bring a sweet and satisfying ending to the occasion. Seatings from 5:30pm to 10:00pm.
Toast to 2024 with The Lobby Lounge and RawBar with a selection of Dom Pérignon inspired table packages. Each table reservation receives a bottle of Dom Pérignon champagne, table snacks, masquerade masks, and party favours. Throughout the evening, guests can expect signature Lobby Lounge bites with an assorted sharing platter, live entertainment including a trio band and a DJ, an exhilarating acrobat show, 360 Instagram action camera, black carpet arrival, exciting midnight surprise and more.
