Fairmont Hotel Vancouver Pop-Up Restaurant The Roof
byLast night the Fairmont Hotel Vancouver hosted a preview event for their new pop-up restaurant on the 15th floor of their iconic downtown accommodation, announcing that The Roof will be open this month.
Pop-Up Restaurant The Roof
Under the copper green roof of the Fairmont Hotel Vancouver, The Roof will be open from February, 2014 through to the fall and it will be the hotel’s main venue for breakfast, lunch, and dinner service. Decades ago the space was a staple of the Vancouver dining and after work cocktail scene, serving up prime rib — and unique city views — that long time locals still talk about to this day.
Breakfast, Lunch, Dinner, Afternoon Tea
Samples were streaming out of the kitchen at the preview event as guests enjoyed “The Roof Negroni” cocktails and Moscow Mules served in copper cups.
Chef Cameron will create classic, simple, and fresh menu items along with prime cuts of Certified Angus Beef, Sakura Farms Pork and Innisfail Lamb. Fish lovers can choose from the freshest BC Wild Salmon, Haida Gwaii Halibut and Ahi Tuna accompanied by comfortable and creative side dishes.
Once open for service, The Roof will have a breakfast buffet Monday to Friday along with breakfast a-la-carte, lunch, and dinner. Keeping with Fairmont tradition, Afternoon Tea will also be served daily. The bar will have a “bar bites” menu and daily beverage service.

I joined three friends for lunch yesterday at the Roof restaurant. One of our party and myself ordered the foraged mushrooms on toast, It was nicely presented with lots of mushrooms. Unfortunately it was extremely salty and the toast was two slices of very soggy bread. Before we left the restaurant both of us felt somewhat queasy with stomach pains. I had an attack of diarrhoea while still in the hotel. We are both in our late 80’s,but managed to make it home. I continued with stomach pains until 1:00 a.m. in the morning. I just called my friend and she had the same problem.
We do this get together every Christmas and didn’t like to spoil the occasion by complaining. I feel the restaurant should remove the offending dish from their menu before other people have the same problem, it was probably the most unappetizing lunch I’ve had in a long time. Even the coffee was so strong as to be almost undrinkable- altogether it was not a happy occasion. Beverley Atkinson
